TUNA-CACTUS SALAD

2 cans tuna
1/2 cup nopalitos cactus (it comes fresh in the produce section or in jars)
1/2 cup watercress
1 cup gluten-free rice spirals (cook then add)
1 carrot (grated)
1/2 beet (grated)
1/2 onion (finely chopped)
2 garlic cloves
ginger (grated)
turmeric (grated)
pinch salt
1 tablespoon olive oil
1 tablespoon mayonnaise
1 teaspoon apple cider vinegar
1 teaspoon capers

The watercress, carrot, beet, onion, garlic, ginger, and turmeric were raw.

This recipe varied depending on what was in my refrigerator and what leftovers were available.]]></description>
